




Trying to sneak some veggies into your diet? Sneaking it in with pizza makes it easy ✅ I love veggies on my pizza! Folding a pizza in half to make it a calzone makes it much easier to pack for meal prep You can use any leftover veggies for this easy recipe!

My kitchen helper Lexi was NOT happy that I didn’t share this calzone with her (for those who haven’t been following for long: the last time I made calzones, Lexi stole a whole one off the counter and ate the whole thing )

Ingredients:
2 cups all purpose flour
3 teaspoon baking powder
2 cups nonfat plain Greek yogurt
¼ cup pizza sauce
4 oz mozzarella
1.5 oz turkey pepperoni (optional)
1 green bell pepper (diced)
½ cup broccoli florets
1 cup raw baby spinach
1 egg scrambled
(for vegetarian version, omit pepperoni)
Directions:
1. Mix flour, baking powder, and Greek yogurt in a large bowl. Separate into 4 even sections, then use a rolling pin to roll each section flat into a circle.
2. Preheat oven to 400 degrees and line baking sheet with parchment paper. Place each piece of dough on pan, spread pizza sauce onto ½ the circle, place pepperoni, cheese, and veggies onto half, then fold the dough in half to make calzone. Press down the edges with a fork to seal.
3. Scramble egg in small cup then paint onto top of each calzone. Bake in oven for ~20-25 mins until tops are golden. Allow to cool and enjoy!
