


Another Sunday meal prep is upon us! What better thing to get excited about this week than chorizo quesadillas?! For those who don’t know, chorizo is traditionally a type of spicy pork sausage, but I had ground turkey in the freezer, so that’s what I used ♀️ These quesadillas are tasty nutrition power-houses, full of protein, fiber, and almost 9g of the healthy unsaturated fats!

Calories per serving: 302
Protein per serving: 30 g
Carbs per serving: 37 g
Fat per serving: 13g (4.3g sat fat)
Ingredients:
2 lbs ground turkey
1 tablespoon Apple cider vinegar
3 cloves minced garlic
2 teaspoon paprika
2 teaspoon chili powder
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon chipotle chili powder
1 white onion (chopped)
1 tomato
1 stalk romaine hearts (cut)
½ cup reduced fat cheddar cheese
6 Mission whole wheat carb balance tortillas
For spicy dipping sauce: ¼ cup light mayo + 2 tablespoon sriracha (adds 23 calories/serving)
Directions:
1. Mix ground turkey, vinegar, garlic, and all spices in a large bowl. Spray pan with olive oil spray, place in turkey mix and chopped onion over medium heat, and cook until turkey is done and crumbled (about 8-10 mins). Place in bowl and set aside.
2. Wipe out pan. Spray again with olive oil spray, then place tortilla in pan. Add turkey mix, cheese, sliced tomato, and lettuce to ½ of tortilla, then fold in half. Cook on medium low heat, flipping often. (Cook about 4-5 mins per side). Remove from pan and enjoy!
