

Happy 4th of July everyone!! There will be lots of BBQ’s going on today, and if you’d rather hang out with the crowd ♀️ instead of standing at the grill all night, this super easy recipe is for you! BBQ Beef is so delicious, perfect for a cookout, and is so easy to make! You don’t have to sacrifice time with friends or your nutrition goals with this version of slow cooker BBQ beef
I served mine with a sandwich thin instead of a bun to save a few extra carbs I want to use on dessert
Servings: 4 (1 serving = 4 oz beef)
Calories per serving: 336 cal
Protein per serving: 28 g
Carbs per serving: 16 g
Ingredients:
3 lb chuck roast *before trimming fat* (yields about 16 oz after fat trimming and cooking)
¼ cup BBQ sauce
1 onion
¼ cup apple cider vinegar
½ tablespoon garlic powder
1 tablespoon brown sugar
2 tablespoon Dijon mustard
2 tablespoon Worcestershire sauce
1 teaspoon stevia

Directions:
1. Trim all fat from beef, cut into large cubes, and place into slow cooker - or instant pot. Dice onions and add in with beef, then add all the rest of the ingredients.
2. SLOW COOKER: cook on high for 4-5 hours or on low for 6-8 hours.
INSTANT POT: cook on high pressure for 45 mins.
3. When beef is done, remove from pot and shred with 2 forks, then add beef back into pot with liquid and stir
4. Scoop out 4 oz with a spoon (about ¾ cup or so) and enjoy!
