
I had ½ butternut squash left over from this week’s first recipe and 1 lb turkey sausage in the freezer, so I decided to try to turn it into something for breakfast! ♀️ This recipe requires minimal ingredients and was SO good I’ve eaten it for breakfast for the past 5 days and I’m not even close to being sick of it yet (it’s also been keeping me full all the way to lunchtime, which is a huge deal)

Servings: 6
Calories per serving: 256 cal

Ingredients:
1 lb ground turkey sausage
4 eggs
1 lb butternut squash (cubed)
1 teaspoon Italian seasoning
1 teaspoon black pepper
1 cup part-skim shredded mozzarella
Directions:
1. Add ground turkey and cubed butternut squash to skillet and cook on medium-high heat until turkey has completely browned (about 8 mins). Then remove from heat. Preheat oven to 375 degrees.
2. In a separate bowl, crack 4 eggs, add Italian seasoning and pepper, and scramble. Pour egg mixture over skillet containing sausage and squash. Then top with mozzarella.
3. Place skillet in oven and bake for ~15 mins (until cheese is melted and starts to brown). Remove from oven and enjoy!
