

If you’re looking to spice up your looking to spice up your boring breakfast rough tone, then look no further! Scotch eggs are a great all-in-one, portable breakfast for those busy mornings on the go (which if we’re being honest, is me every morning) ♀️ These eggs are super easy to prep for the week, and keep in the fridge until you’re ready to grab them and run out the door ♀️

Servings: 6 (nutrition information shown per egg)
Calories per serving: 226 cal

Ingredients:
6 eggs (hard boiled)
1 egg (scrambled)
1 lb ground turkey sausage
½ cup panko breadcrumbs
½ cup flour
Directions:
1. Hard boil eggs *(the best way I’ve found to boil eggs is to place them in a pot with cool water, then place the pot over medium-high heat on the stove, bring to a boil. Let boil for 1-2 mins, then remove from heat and let the eggs sit in the water for 13 mins. Then, remove from water, run the eggs under cold water, and peel)*
2. Take raw turkey sausage and pat into patty in hand, place an egg in the middle of the sausage patty, then shape the sausage completely around the egg.
3. Dip sausage-coated egg into flour and roll until completely coated. Then dip and roll around in scrambled egg, then coat completely in panko. Place each egg into oiled baking dish
4. Preheat oven to 425, place in pan of eggs and bake for about 30 mins (until sausage is completely cooked) then remove from oven, and enjoy!
