
Happy Halloween everyone!! Of course for this weeks second recipe, I had to involve pumpkin! One of my favorite breakfasts is overnight oats because they’re so easy to make and they keep me full and energized all morning long ☀️ Spicing up plain oats with some puréed pumpkin this morning helped me start off my day with some Halloween spirit! (I topped mine with a few chocolate chips to keep it fun!)

Ingredients:
¼ cup pumpkin purée
¼ cup vanilla nonfat Greek yogurt
2 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1 teaspoon stevia
½ cup Skim milk (I used Fairlife milk)
½ cup old fashioned oats
½ tablespoon chia seeds
Directions:
1. Combine pumpkin purée, vanilla yogurt, and spices in a large bowl and mix well. Then stir in milk and oats. Add mixture to jar and sprinkle in chia seeds, then shake well and leave in the fridge overnight.
2. Either heat up, in microwave for 1 min & 30 seconds, or serve cold and enjoy! that’s it!
