
We have another easy recipe for the win this week! All of our time has been spent on DIY projects, so all of the meals I’ve been cooking lately have been fast and easy This BBQ chicken was made using smoke pulled chicken I found at Sams Club (see package in the pics) but you can use raw chicken that you cook and shred yourself, or a rotisserie chicken just as easily! I ended up making a double batch because the package of chicken I got was huge!
I chose to make my own BBQ sauce for this recipe to avoid all of the added sugar in regular BBQ sauce (60g sugar in ½ cup ). Of course there’s nothing wrong with eating regular BBQ sauce, I just wanted to keep things lighter this time

Ingredients:
16 oz pulled chicken
1 teaspoon salt
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon stevia
½ medium yellow onion (roughly chopped)
2 cloves garlic (minced)
1 can tomato paste
⅓ cup balsamic vinegar
1 tablespoon light brown sugar
⅛ cup water
½ tablespoon low sodium soy sauce
Directions:
1. Preheat oven to 375 degrees. In a pan over medium high heat, spray with olive oil, add onion and cook until slightly browned, then add minced garlic and cook for another 2 mins.
2. In a large baking dish, combine pulled chicken, spices, onion and garlic mixture, tomato paste, vinegar, brown sugar, water, and soy sauce. Mix well and cover dish tightly with aluminum foil.
3. Bake for 30-40 mins. Remove aluminum foil and bake for an additional 5 mins. Allow to cool and enjoy!
