
Now that we all have a little more time on our hands, why not use it to spice up your brunch-game?! I LOVE @kodiakcakes products because they are made with 100% whole grains, have more fiber than traditional flour/mixes, and are packed with protein to keep me fuller longer! I made two types of crepes for Austin and I: mixed berry with sugar-free syrup & banana Nutella! You can use any toppings you have at home to make your own version (maybe even a savory kind!)




Servings: 10 (this recipe makes 10 crepes, so I included the nutrition per crepe. For reference, I ate 2 and Austin ate 3)

Protein per serving: 8g
Carbs per serving: 8g
Fat per serving: 5g
Ingredients:
1 cup Kodiak Cake buttermilk mix
½ teaspoon nutmeg
½ teaspoon cinnamon
1 cup skim milk
1 cup egg whites
3 eggs
1 teaspoon vanilla
2 tablespoon butter (melted)
1 tablespoon butter (unmelted)
Toppings of choice!
Directions:
1. Mix Kodiak cake mix, nutmeg, and cinnamon in one bowl. Mix milk, egg whites, eggs, vanilla, and melted butter in another bowl. Then, slowly add dry ingredients and wet ingredients and stir until combined and smooth.
2. Cut off tiny sliver of reserved 1 tablespoon butter and melt in a medium sized pan over low heat. Add about ¼-1/3 cup mix to pan and swirl pan around until batter coats the bottom of the pan. Cook for 2-3 mins, then *carefully* flip and cook for another 2-3 mins. Fold in half, then in half again, and set aside.
3. Repeat all of step 2 until all the batter is gone, add toppings of choice, then enjoy!
