Protein Oatmeal Stuffed Apples
Calories per serving: 233 caloriesNutrients per serving: 15g protein, 30g carbs, and 6g fat
Ingredients
- 6 apples
- 2 cups old fashioned oats
- 1.5 cups skim milk
- 1.5 cups water
- 2 cups egg whites
- 1 teaspoon stevia
- 1 teaspoon cinnamon
- 1 tablespoon butter
- ¼ cup pecans chopped
- 1 tablespoon maple syrup
Instructions
- Preheat oven to 400 degrees. Then, cut tops off apples, core, and scoop out remaining insides. Place apples in baking dish, then melt butter in a small microwaveable safe dish and set aside. Combine stevia and cinnamon in a separate dish and set aside.
- While oven heats, add water and milk to a medium saucepan and bring to a boil. Add oats and apple insides and reduce to a simmer until oats have absorbed all liquid. Then, turn heat even lower and add egg whites to pot and whisk continuously *important step* for 1-2 mins.
- Brush apples with melted butter, sprinkle evenly with cinnamon stevia mixture, and fill apples with oatmeal. Bake for 35 mins. Then remove from oven, top with pecans, drizzle with maple syrup, and enjoy!
