We discussed ‘Surviving’ the Holidays with some lighter versions of classic recipes! As always, we definitely don’t want to be too strict during the holidays ♀️ but balancing the happy with the healthy will help you enjoy the holidays while feeling good on the inside and outside



This quiche is perfect for a crowd on Christmas morning! ☀️ You can throw in any left over vegetables, protein, etc to customize it to your taste!

Ingredients:
10 oz potato puffs (thawed and crumbled)
½ cup halved cherry tomatoes
½ cup broccoli florets
4 cloves minced garlic
¼ cup reduced fat feta cheese
6 large eggs
⅓ cup skim milk
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon black pepper
½ cup reduced fat cheddar cheese
Directions:
1. Preheat oven to 425 degrees. Pour crumbled potato puffs into ungreased pie pan, and pat flat and around edges to make crust.
2. Add tomatoes, broccoli florets, garlic, and feta cheese into pan with crust. In a separate bowl, scramble eggs, milk, and spices and pour over top vegetables.
3. Bake for ~10 mins. Remove from oven and sprinkle with cheddar cheese, then place back into oven for 5-7 more mins until cheese is melted. Slice into 8ths and enjoy!
