
Many of us are really “carb shy” these days. Carbohydrates get a really bad rep for being unhealthy. In reality, we need carbs to survive! They provide our bodies with quick energy, and can be paired with lots of vitamins, minerals, and best of all, fiber! Carbs are not the sole cause of unhealthiness or weight gain; we just tend to eat them in excess. Everything in moderation is the key to a healthy diet and lifestyle!

Ingredients:
4 russet potatoes
8 oz part-skim mozzarella cheese
¾ C low-sodium marinara sauce
1 bag mini turkey pepperoni (regular size also works fine)
1 large green bell pepper
1 teaspoon olive oil
1 teaspoon Italian seasoning
Directions:
1. Pre-heat oven to 400 degrees
2. Wash potatoes, poke holes in potatoes with a fork, wrap in aluminum foil, and stick in the oven to bake (45-60 mins or until tender)
3. While potatoes are baking, chop bell pepper into bits, then sauté in pan using 1 teaspoon olive oil, then set aside
4. Once potatoes are finished baking, unwrap from aluminum foil, cut each potato in half, and put in glass baking dish
5. Pour marinara sauce evenly over potatoes, sprinkle with mozzarella cheese, peppers, pepperoni, and Italian seasoning
6. Place potatoes in dish back in oven and bake for an additional 10–15 mins until cheese is melted. Take dish out of oven and allow to cool before serving!
