Tomorrow is Valentine’s Day and love is in the air! If you want to cook a super easy, super tasty, delicious dinner for your boo thang (or for yourself) you’ve GOT to give this recipe a try!
It’ll satisfy your craving for a fancy pasta meal, but won’t leave you laid up on the couch after eating (like I’ve done one too many times) Of course there’s nothing wrong with regular pasta, but if you’re looking to sneak in more veggies, this recipe is for you!

Low-Carb Shrimp Scampi

Ingredients
- 2-3 zucchini
- 1 lb raw peeled shrimp (I used frozen)
- 4 cloves garlic
- 3 tablespoon butter
- 1 teaspoon red pepper flakes
- Juice of 1.5 lemons
- ½ cup parsley chopped fine
- ¼ cup Parmesan cheese shredded
- Salt and pepper to taste
Instructions
- Use spiralizer or cheese grater to make zucchini into “noodles” and set aside. (You can buy pre-made zucchini noodles, but they’re much more expensive!)
- Place butter and garlic on stove in large pan on medium heat. Sauté for about 2 mins until garlic just starts to brown. Add zucchini noodles and sauté for ~3-4 mins while tossing continuously.
- Then add shrimp to pan, raise heat to medium-high, and continue to sauté until shrimp completely turn pink (about 3-4 more mins). Once shrimp has turned pink, add red pepper flakes, salt & pepper, lemon juice, and fresh parsley pan and stir well.
- Spoon into 4 servings, top with parmesan cheese, and enjoy!
