
My mom’s beef stroganoff was one of my favorite meals growing up. This week, I wanted to try a slightly healthier version made with zucchini noodles! Using vegetables in place of pasta is a really great way to save on calories, while adding more vegetables to your diet. The lean beef used in this recipe is a great source of protein and iron

Ingredients:
2 lbs sirloin
1 lb mushrooms
1 yellow onion
2 cloves garlic
⅔ cup light sour cream
½ cup beef broth
1 medium zucchini
Directions:
1. Cut sirloin into small cubes. Cook over medium-high until beef is cooked completely through. Remove from pan (leave liquid from cooking in pan)
2. Add mushrooms, onion, and garlic to pan with liquid and sauté for 8 mins
3. While mushroom mixture is cooking, use peeler to peel zucchini into noodle-like strips. Sauté with 1 teaspoon olive oil over medium heat for 5 mins, stirring constantly
4. Add beef back into pan with mushroom mixture, add beef broth and sour cream, then bring to a simmer, then remove from heat
5. Spoon sauce onto zucchini noodles and enjoy!
