
Loaded potato soup is one of my specialties, buuuut the recipe I used to make is VERY calorie dense and has lots of unhealthy fats using cauliflower in place of the potato, and being smart with other added ingredients makes sure you won’t sacrifice any flavor while having a much healthier soup
Servings: 4 (1 serving = about 2 cups)
Calories per serving: 296
Protein per serving: 26 g
Carbs per serving: 15 g
Ingredients:
1 large head cauliflower (rinsed and chopped)
1 yellow onion (chopped)
5 cloves garlic (minced)
1 tablespoon olive oil
1 cup chicken broth
1 boneless skinless chicken breast (cooked and shredded)
1 cup skim milk
½ cup Parmesan cheese
½ cup low fat cheddar cheese
¼ cup cooked bacon (about 3 slices)
1 teaspoon thyme, 1 teaspoon parsley, 1 teaspoon rosemary, ½ teaspoon red pepper flakes
Salt and pepper to taste
Directions:
1. Add olive oil, cauliflower, onion, and garlic to a pan over medium-high heat and satue until cauliflower and onion start to brown (about 10 mins). Then transfer contents of pan to food processor/blender and pulse until puréed. Place in a bowl and set aside
2. In a pot on stove on medium heat, add broth, milk, cauliflower purée, chicken, bacon, cheeses, and spices. Stir well and bring to a simmer
3. Let soup simmer for 10 mins. Then remove from heat, spoon out 4 servings, and enjoy!
