





Looking for a last minute Super Bowl appetizer? ⏰ These jalapeño poppers are a light version of the typical deep-fried jalapeño poppers, but they taste even BETTER! So good that I’m tempted to make another batch for my meal prep this week They’re sure to be a crowd pleaser at your football party

Servings: 12 (1 serving = 2 poppers)

Ingredients:
12 jalapeño peppers
8 oz reduced-fat whipped cream cheese
4 slices turkey bacon (cooked and crumbled)
3 sliced scallion greens
½ cup reduced-fat shredded cheddar (divided)
½ teaspoon paprika
½ teaspoon garlic powder
1 small sprinkle chili powder
½ cup egg whites
1 cup panko breadcrumbs
1 teaspoon black pepper
For a vegetarian version, just exclude the turkey bacon!
Directions:
1. Preheat oven to 350 degrees. Cut all jalapeños in half and scoop out seeds and insides. Place on a baking sheet lined with parchment paper.
2. In a bowl, combine cream cheese, ¼ cup cheddar cheese, scallions, turkey bacon, paprika, garlic powder, and chili powder in a bowl. Then transfer into plastic baggy.
3. Combine panko and pepper on a large plate. Pour egg whites into a bowl. Dip bottom half of each pepper into the egg whites, then into panko mixture, and place back onto baking sheet.
4. Cut a large corner out of the baggy with cream cheese mixture and squeeze to fill each pepper. Sprinkle with the leftover panko. Bake for 15 mins. Then, sprinkle the top with remaining cheese and bake for an additional 5 mins. Enjoy!
