
With the cold weather still sticking around, I figure hot soup makes the perfect meal! Granted, I love soup all year round This soup was so easy to make!! It freezes well, and has tons of veggies included for nutrients - what a great way to boost that immunity! It’s so yummy, that I didn’t even add cheese... which says A LOT of you know me

I also want to say sorry for the short delay in posting this recipe, but I was busy getting ENGAGED


Servings: 6
Nutrition per serving: 383 cal, Protein 29g, Carbs 28g, Fat 15g
Ingredients:
½ tablespoon olive oil
1 lb Italian sausage
3 cloves minced garlic
32 oz beef bone broth
1 can stewed tomatoes
3 large carrots, sliced
1 can great Northern beans
2 zucchini, sliced into moons
2 cups spinach
Salt, pepper, onion powder, and Italian seasoning to taste
Directions:
1. Add olive oil to large pot over medium-high heat and add sausage. Cook until almost completely browned, then add garlic and continue to stir until completely browned. Add broth, tomatoes, carrots, and spices and cover & simmer for 15 mins.
2. Then and add beans and zucchini and re-cover. Simmer for 15 more mins, then turn off heat, uncover, and stir in fresh spinach (the spinach will wilt from the heat of the soup). Then let cool and enjoy! that’s it!!
