

I’m just a tad bit late posting this week because I’m on vacation! I didn’t meal prep a second meal this week, but an awesome appetizer instead. Brussels Sprouts are notoriously the vegetable that everyone hates, but that’s just because you haven’t had them in the right way yet! ♀️ When you bake Brussels sprouts in the oven until they’re crispy - instead of mushy - it brings out a whole new flavor!

Ingredients:
2 lbs Brussels sprouts
2 tablespoon olive oil
2 tablespoon honey
⅛ cup Dijon mustard
1 tablespoon ground mustard
1 teaspoon black pepper
Directions:
1. Preheat oven to 400 degrees. Rinse and dry Brussels sprouts, then cut them all in half and set on a baking sheet.
2. Mix olive oil, honey, Dijon mustard, ground mustard, and pepper in a small bowl. Pour evenly over Brussels sprouts and use a spatula or spoon to mix around to evenly distribute sauce.
3. Bake in oven for 30 mins (or until crispy). Mix around Brussels sprouts half way through to endure even crispness. Remove from oven and enjoy!
