
My mom makes this honey-baked chicken for family get-together’s and it’s always a huge hit! This week, I decided to put a healthier-twist on her honey baked chicken. Remember, any food can fit into your diet (yes, even butter!) we just have to watch the portion size and the frequency!

Ingredients:
3.5 lb boneless, skinless chicken thighs
⅓ cup butter
⅓ cup honey
2 tablespoon ground mustard
1 teaspoon curry powder
1 teaspoon salt
1 bag Minute brown rice
Directions:
1. Pre-heat oven to 360 degrees
2. Mix butter, honey, ground mustard, curry powder, and salt in a small pot on the stovetop over medium-high heat
3. Place chicken in a shallow baking dish, then pour the sauce-mixture over the chicken and place in oven
4. Bake for 60 minutes total (ensure that internal temp of chicken is at least 165 F). Every 15 minutes during baking (3 times total) remove the pan from the oven and flip the chicken over
*This step is very important to make sure that the chicken absorbs the sauce!*
5. While chicken is baking, boil water and place rice bag in boiling water for 10 mins, then remove from heat and pour in bowl
6. After cooling, place the chicken over rice and enjoy! (as you can see, I served mine with roasted asparagus)
