
Since staying home more, I’ve been craving ALL the comfort foods Hamburger Helper was always one of my favorite dinners growing up, and since I haven’t had it in years I wanted to make some at home! This meal is perfect for “home meal prep” - which is basically just normal meal prep while we’re all stuck at home Preparing meals ahead of time helps keep me from getting too hungry (and then eating way too much and feeling like crap ) and helps me stay on track with my nutrition goals!

Ingredients:
1 lb lean ground turkey
8 oz elbow Banza pasta
2 cups low-sodium beef broth
1.5 tablespoon ketchup
1 tablespoon Dijon mustard
½ cup nonfat plain Greek yogurt
1 teaspoon hot sauce
1 teaspoon garlic powder
1 teaspoon onion powder
2 cups reduced fat shredded cheddar
Salt and pepper to taste
Directions:
1. Add beef broth to small pot and bring to a boil, then add pasta and cook to al dente when, then drain pasta and set aside. (Reserve ¼-1/2 cup broth after cooking!)
2. Brown ground turkey in large pan until fully cooked through. Add reserved broth, ketchup, Dijon mustard, Greek yogurt, hot sauce, and spices to pan and stir well. Bring to a simmer and allow to simmer for 2-3 mins.
3. Remove pan from heat and stir in pasta and cheese. Spoon into bowls and enjoy!
