

Who needs garlic parmesan wings when you have these amaaaazing cauliflower bites If you participate in meatless Monday, this is the perfect recipe to try out tomorrow! I paired mine with a garlic aioli (recipe included) and some sautéed snap peas

Ingredients:
2 heads cauliflower4 eggs1 tablespoon skim milk1 cup panko½ cup fresh Parmesan 1 teaspoon Italian seasoning½ tablespoon garlic powder3 cloves fresh garlic (minced)
Aioli ingredients:
¾ cup light mayonnaise
Juice of ½ lemon
4 cloves garlic (minced)
1 teaspoon black pepper
*To make: combine all ingredients in bowl and stir well. 1 serving = 2 tablespoon (56 cal/serving)*
Directions:
1. Add eggs and milk to one bowl and whisk well. In another bowl, combine panko, Italian seasoning, garlic powder, fresh garlic, and Parmesan cheese. Break head of cauliflower into bite sized chunks.
2. Line baking sheet with parchment paper and preheat oven to 450 degrees. Dip each cauliflower chunk in the egg mixture, then into the panko mixture and coat well. Place chunks on the baking sheet.
3. Bake for 30 mins until crispy. Then let cool for 5 mins and enjoy!
