
We treated ourselves to Mexican food this week, and I can honestly say I didn’t make the best choice (I overate big time and had a stomach ache because of it!) Austin made a much better choice than me, and got some delicious shrimp fajitas - so I wanted to try to make my own this week! I served mine with some avocado salsa and non-fat plain Greek yogurt instead of sour cream!


My kitchen helper is still being a little lazy this week as you can see! And yes, I had to get a little creative and make my own taco stand out of aluminum foil ♀️
Servings: 4 (1 serving = 2 fajitas)
Calories per serving: 272 cal
Protein per serving: 30 g
Carbs per serving: 32 g
Fat per serving: 8 g (2.8 g sat. fat)
Ingredients:
1.5 lbs raw shrimp
3 multi-colored bell peppers (sliced)
1 yellow onion (sliced)
1 teaspoon olive oil
1.5 teaspoon chili powder
1 teaspoon cumin
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
8 carb balance whole wheat tortillas
Directions:
1. Place olive oil in large skillet over medium high and add peppers onions. Sauté until onions start to caramelize (about 8 mins). Then add raw shrimp and cook for an additional 5 mins (stirring regularly) or until shrimp are completely pink.
2. Add spices and sauté for another 1-2 mins. Then spoon about 3 oz of mixture into each tortilla and enjoy!
