




Ready in 10 mins! I found some frozen potatoes O’Brien at Aldi and thought they could make a super easy breakfast hash! There’s nothing I love more than looking on a nutrition label and recognizing ALL of the ingredients; no additives, artificial flavors, or preservatives Buying frozen vegetables is a great way to keep convenient, healthful foods on hand at home! ✅

Protein per serving: 18 g
Carbs per serving: 12 g
Ingredients:
2 eggs
¾ cup potatoes O’Brien
2 teaspoon paprika
½ teaspoon cumin
⅛ cup cheddar cheese
Directions:
1. Bring water to a simmer in a small pot.
For easy egg poaching: lay a small piece of plastic wrap over a small dish and crack egg into dish. Twist up plastic wrap (pictures included!) and add to simmering water. Simmer for 5-8 mins depending on desired yolk consistency.
2. While eggs are poaching, spray pan with olive oil, pour potatoes O’Brien and spices into pan and sauté for 6 mins until they start to brown.
3. Top potatoes with poached eggs, a little cheddar cheese, and enjoy!
