
Happy MDW everyone! If you’re looking for the perfect, easy recipe to bring to your cookout tomorrow, you can’t go wrong with this creamy potato salad! From start to finish this recipe took about 20-25 mins to throw together
⚠️ White potatoes often get a bad rep for being ‘too high in simple carbs” but did you know that a white potato contains nearly half your daily recommended amount of Vitamin C , has more potassium than a banana , contains antioxidants , and has only about 1g of sugar?So enjoy your picnic and eat the dang potatoes

Servings: 8 (1 serving = ~1 cup)

Ingredients:
3 lbs white potatoes
2 stalks celery
½ white onion
3 hard boiled eggs
¾ cup light mayo
¾ cup nonfat plain Greek yogurt
1 tablespoon dried dill
½ tablespoon white vinegar
2 teaspoon stevia
2 teaspoon black pepper
1 teaspoon salt
Directions:
1. Peel and cube potatoes into ~1 inch cubes. Bring large pot of water to a boil then add potatoes and cook for ~12-15 mins until potatoes are tender.
2. Meanwhile, boil eggs. Then chop eggs, celery, and onions very finely and add to large bowl.
3. Add potatoes and all other ingredients to the bowl, mix well, chill for at least 30 mins and enjoy!
