
This is one of my absolute favorite dips! It’s full of veggies, super flavorful, and so easy to put together. It’s the perfect quick dip to bring to a party, or even to just keep in the fridge for snack time! I actually had to hide some from Austin since he’s been known to eat an entire large Tupperware’s worth in one sitting

Calories per serving: 176 cal
Protein per serving: 6 g
Carbs per serving: 20 g
Ingredients:
⅓ cup olive oil
⅓ cup white wine vinegar
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon salt
Juice from ½ lime
5 Roma tomatoes (diced)
1 red onion (diced)
1 green bell pepper (diced)
1 can black-eyed peas (drained and rinsed)
1 can low-sodium black beans (drained and rinsed)
1 small bag frozen yellow corn
1 cup cilantro (chopped fine)
Directions:
1. Chop tomatoes, onion, pepper, and cilantro into tiny bits and place into large bowl
2. Add olive oil, vinegar, lime juice and spices
3. Add black-eyed peas, black beans, and corn and mix
4. Let sit in the fridge for at least one hour (the longer it sits, the better it gets!) and enjoy!
