
Have some leftover chicken or turkey from the holidays?? Why not use it to make this classic chicken (or turkey) salad recipe! Perfect for a easy to make, delicious work lunch to help you sneak in some more protein and veggies I served mine with toasted Xtreme wellness tortilla chips that I made in the oven, but you could just as easily serve yours with crackers, on a wrap, or even as a sandwich!

Ingredients:
16 oz boneless skinless chicken or turkey
2 stalks celery
1 carrot
½ yellow onion
½ cup nonfat plain Greek yogurt
⅓ cup light mayo
½ tablespoon lemon pepper
1 teaspoon garlic powder
Salt and pepper to taste
Directions:
1. Chop veggies finely and make sure to shred chicken (or turkey) well. Then mix all ingredients in a bowl, serve, and enjoy!
