


Austin and I love eating at the Greek Pita Place in Salisbury, and especially love their chicken souvlaki! I was inspired to try to make my own healthy version after we ate there a few days ago. The #1 rule in trying to eat a little healthier is to make recipes that you get excited about! This is a definitely healthy meal that to I look forward to eating every day
It’s also super easy to pack up and take to work! I made mine like a salad with pita on the side for easier eating
Servings: 4
Calories per serving: 373 cal (399 cals with sauce)
Protein per serving: 30 g
Carbs per serving: 41 g
Ingredients:
3 boneless, skinless chicken breasts
Juice from 1 lemon
5 cloves garlic
2 tablespoon olive oil
2 tablespoon oregano
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon paprika
Salt & pepper to taste
Fo serving: 4 whole-wheat pitas, 2 cups arugula, 1 cup cherry tomatoes (halved), 1 cucumber (cubed), and 1 red onion
Sauce Ingredients:
2 cups Greek yogurt
4 cloves garlic (minced)
1 tablespoon olive oil
1 tablespoon fresh dill
¾ cucumber (seeded and grated)
Juice from ½ lemon
Salt and pepper to taste
(To make sauce: just combine all ingredients in a large bowl and add to pita in desired amount )
Directions:
1. Cut chicken into cubes. Add to bag with lemon juice, garlic, olive oil, and spices. Marinate for at least 30 mins (I recommend longer to really get a good flavor!
2. Add contents of bag into a skillet over medium-high heat. Cook for ~15 mins, stirring occasionally. Cook until chicken starts to get black “grill marks.” Then transfer to bowl and set aside.
3.Lay pita on plate and add as much arugula, tomatoes, and onion as you would like. Then add chicken, top with a little tzatski sauce, and enjoy!
