

Who doesn’t love nachos?? Nachos are one of my favorite foods, but getting them from a restaurant, like Chili’s, can really interfere with my daily nutrition. The chicken nachos at chilis are 1420 calories and 60 g carbs This recipe allows me to eat one of my favorite foods, without sacrificing my nutrition!

Calories per serving: 306 cal
Protein per serving: 27 g
Carbs per serving: 23 g
Ingredients:
1.5 lb boneless, skinless chicken breast, cubed
1 teaspoon pepper
2 teaspoon chili powder
2 teaspoon garlic powder
2 teaspoon cumin
1Tbsp cinnamon
1 tablespoon olive oil
1 onion, halved and sliced
4 cloves garlic, minced
3 bell pepper, sliced lengthwise
1 lime, juiced
½ bag whole grain tortilla chips
2 cup shredded sharp cheddar cheese
⅔ cup light sour cream
Directions:
1. Chop chicken, peppers, onion, and garlic
2. Add olive oil to pan over medium-high heat. Add chicken, onion, garlic, and peppers. Sauté until chicken is fully cooked in the center and vegetables are no longer crunchy (about 15 mins), then add spices and sauté for an additional 5 mins
3. Pre-heat the oven to 375 degrees
4. Place tortilla chips on a baking sheet, and spread chicken and vegetable mixture over chips. Sprinkle with cheese and bake for 12 mins until cheese is melted
5. Remove from oven, top with sour cream to taste, and enjoy! (I like to bake my nachos one serving at a time. I put the chicken and veg mixture into a container to store for the week, and only added the chips and cheese to bake one serving at a time to avoid soggy nachos!)
