

Is it just me, or do the Chick-fil-A cravings hit the hardest on Sunday’s?! We love their burrito bowls for breakfast, so I decided to try a homemade version this week for my breakfast meal prep Making your restaurant favorites at home is a great way to save some unnecessary added ingredients (and calories) AND save money!

Servings: 1 (S = sausage, C = chicken)
Calories per serving: S - 340, C - 354
Protein per serving: S- 28g, C - 26g
Carbs per serving: S - 13g, C- 19g
Fat per serving: Both 19g (sat. fat 7g)
Ingredients:
2 eggs
1 oz cooked turkey breakfast sausage (OR 1 oz whole-grain breaded chicken if doing chicken)
¼ cup low fat shredded cheddar
½ cup shredded potatoes
1 teaspoon olive oil
2 tablespoon salsa
Salt and pepper to taste
Directions:
1. Wash and peel potato (about 1 large or 2 small). Then boil water in a medium pan and add potatoes. Boil for ~10 mins then remove and allow to cool. Once cooled, use a grater to grate potatoes into shreds.
2. Spray pan with olive oil spray, place over medium-high heat, then add shredded potatoes. Cook for ~5-6 mins per side until browned.
3. While potatoes are cooking, whisk eggs and add to pan on medium heat. Scramble well, then add to bowl.
4. Top eggs with sausage or chicken, homemade hash brown, cheese, and salsa and enjoy!
