Ingredients:
1 lb 97/3 lean ground beef
4 zucchini
½ onion
2 cloves garlic
6 oz can tomato paste
1 tablespoon Dijon mustard
¼ cup skim milk
½ cup reduced fat cheddar (divided)
1 teaspoon onion powder
1 teaspoon garlic powder
Salt and pepper to taste
Directions:
1. Slice zucchini in half lengthwise and scoop out the innards (save about ½ cup of the innards, you’ll use these later). Chop onion and mince garlic.
2. Heat a small drizzle of olive oil in a pan over medium heat and add onions. Cook for 4-5 mins. Then, add ground beef and cook until browned. Add spices, salt and pepper, tomato paste, reserved zucchini innards, and garlic to the pan and cook for 2 more mins, stirring well. Then add mustard, ¼ cup cheese, and milk and stir well. Allow to simmer for ~4 mins.
3. Preheat oven to 375. Place zucchini boats in a baking dish, then fill evenly with cheeseburger mixture. Sprinkle with remaining ¼ cup cheese, then bake for ~15 mins and enjoy!
