




Meatballs are one of my go-to’s for meal prep because you can make them so many different ways, and they’re very portable! I wanted to try a different twist on a classic spaghetti and meatballs this week - because that’s what I was craving I served mine with edamame pasta (not included in nutrition facts) and a spinach salad!
Servings: 5 (1 serving for me = ~5 meatballs)
Calories per serving: 387 cal
Protein per serving: 45 g
Carbs per serving: 7 g
Ingredients:
2 lb ground turkey
½ cup panko
2 eggs
1 teaspoon garlic powder
1 teaspoon pepper
½ cup spaghetti sauce (I used Prego tomato basil)
4 oz part-skim mozzarella cheese
Directions:
1. Prepare cheese by cutting into ~1 inch cubes. (At the end I had 27 cubes of cheese) In a large bowl, combine turkey, panko, eggs, garlic powder, and pepper and mix well.
2. Preheat oven to 400 degrees and line pan with aluminum foil (or you can just spray the pan with non-stick spray).
3. Grab about 2 tablespoon size ground turkey and pat semi-flat in hand (pics included). Place cube of cheese in middle, then roll the meatball into a round shape around the cheese. Make sure no cheese is visible after rolling! Repeat until all ground turkey is gone. Place meatballs in pan, top with spaghetti sauce, and place in oven for 20 mins (flipping once ½ way through).
4. Remove from oven and enjoy!
