
I first made this recipe when I was in college to become a Dietitian, and was playing around with some vegetarian recipes! My sister absolutely loved them, and hasn’t stopped asking for them since even my dad (a true meat and potatoes guy) loved them, which is a huge win If you’re looking to make some more vegetarian recipes, or if your local grocery store is out of meat, give these a try! We wrapped ours in lettuce and added a little spicy mayo and tomato





Servings: 2 (1 serving = 3 fritters!!)

Ingredients:
1 head cauliflower
¼ cup flour
2 eggs
⅓ cup reduced fat Parmesan sprinkle
2 tablespoon panko
½ cayenne pepper
1 teaspoon Italian seasoning
1 teaspoon garlic powder
Salt and pepper to taste
Directions:
1. Cut cauliflower into florets. Add to pot with boiling water and boil until tender (5-10 mins). Drain and place cauliflower in between 2 layers of paper towels (or use a cheese cloth) to squeeze out as much water from cauliflower as possible! Add to large bowl.
2. Add all other ingredients and mix well. Form mixture into 6 “patties” (I used parchment paper to make it easier). Spray pan with olive oil spray and place over medium heat. Fry each fritter about 3-4 mins per side - or until desired fineness.
3. Serve plain, on a bun, on a lettuce wrap, or however else you want and enjoy!
