


I’m totally loving this bowl recipe for my meal prep this week It was a lot cooler here today, so I wanted something hearty and comforting
No need to be scared of carbs like potatoes, bread, or pasta (especially with colder weather coming) your body needs carbs to function properly! I topped mine with a little tomato for some more flavor
Servings: 6
Calories per serving: 400 cal
Protein per serving: 31 g
Carbs per serving: 28 g
Fat per serving: 19 g (6.5 g sat. fat)
Ingredients:
1.5 lb top round steak
1 cup orange juice (I used Tropicana 50)
½ cup lime juice
4 cloves garlic
½ tablespoon chili powder
½ teaspoon oregano
1 teaspoon black pepper
4 russet potatoes (cubed)
1 tablespoon olive oil
½ tablespoon paprika
½ tablespoon garlic powder
2 oz queso Fresca cheese (shredded)
½ cup nonfat Greek yogurt and ⅓ cup guacamole for serving
Directions:
1. Place steak in large dish with orange juice, lime juice, garlic, chili powder, oregano, and pepper. Marinate for 30-45 mins (flipping ½ way through).
2. While steak is marinating, cube potatoes, and mix in a large bowl with olive oil, paprika, and garlic powder. Then spread on a large baking sheet, and cook on 450 for 15-20 mins. Top with shredded cheese then bake for an additional 5 mins.
3. After steak is done marinating, cook in skillet over medium high heat for 15 mins, flipping every 5 mins or so, until fully cooked.
4. Scoop potatoes into a bowl, top with steak, ~1.5 tablespoon Greek yogurt and ~1 tablespoon guacamole and enjoy!
