
This week’s second recipe is the product of experimenting in the kitchen with ingredients that you have on hand! I tend to like savory breakfast more than sweet, so I thought a breakfast fried “rice” could be a fun meal! It’s super tasty and freezes well for those mornings when you’re in a hurry ❄️

Ingredients:
½ cup cauliflower rice
2 eggs
1 clove garlic (minced)
1 teaspoon chipotle chili powder
Salt and pepper to taste
2 tablespoon salsa
2 tablespoon nonfat Greek yogurt
⅛ cup cheddar cheese
Directions:
1. Spray pan with olive oil spray and place on stovetop over medium heat. Add cauliflower rice and garlic. Stir constantly for about 5 mins.
2. Push cauliflower to the sides of the pan to create a “hole” in the middle. Crack two eggs into the hole, then begin stirring cauliflower rice and eggs together. Cook for another 3 mins (stirring regularly) until eggs are almost done.
3. Add chili powder, salt, and pepper, and cook for an additional 1-2 mins. Remove from pan.
4. Top with salsa, Greek yogurt (in place of sour cream), and cheddar cheese and enjoy!
