This is much better than buying store bought because it lasts so much longer, it’s always fresh, and I control what it’s grown with! Pairing this fresh lettuce with some blackened shrimp makes for a super quick dinner that everyone will love

Ingredients:
6 oz shrimp
Juice from ½ lemon
1 tablespoon blackening seasoning of choice (recipe for homemade included)
1 teaspoon honey
2 oz shredded Parmesan
10 cherry tomatoes
4 romaine leaves
Blackening seasoning (makes 8-10 servings):
2 tablespoon paprika
1.5 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon ground thyme
1 teaspoon pepper
½ teaspoon salt
¼ teaspoon cayenne pepper
Directions:
1. Spray pan with olive oil spray and place over medium high heat. Add shrimp (mine was frozen), lemon juice, blackening seasoning, and honey to pan and cook until shrimp is all the way pink (mine took about 4 mins). Stir often to ensure even cooking.
2. Spoon shrimp into lettuce cups and top with Parmesan and tomatoes, and that’s it! Enjoy!
