
A few months ago I started experimenting around with making my own blackening seasoning. It can be made simply with spices around the house, and will save you money from buying the expensive version in the store! In my opinion, it also tastes waaaay better and fresher. What better way to serve blackened chicken than on skewers with lots of fresh veggies?
Servings: 6 (3 skewers = 1 serving)

Protein per serving: 23 g
Carbs per serving: 8 g
Ingredients:
1.5 lb boneless skinless chicken breast’s
3 bell peppers (the more colorful the better)
1 package cherry tomatoes
1 red onion
Ingredients for the blackening seasoning:
2 tablespoon paprika
1.5 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon ground thyme
1 teaspoon pepper
½ teaspoon salt
¼ teaspoon cayenne pepper
Directions:
1. Combine all spices for blackening seasoning in a small bowl
2. Cut peppers and onions into 1 x 1 inch squares
3. Cut chicken into small cubes and place into large bowl. Add blackening seasoning to taste (I used about ⅓ of the batch) and toss the chicken with seasoning. * Save the rest of the seasoning in a ziplock bag for another time
4. Place chicken, cherry tomatoes, peppers, and onions onto skewers into any pattern you’d like (I made sure each skewer had at least 3 pieces of chicken)
5. Bake in oven at 360 degrees for 20-30 mins (until cherry tomatoes begin to look wrinkled) then allow to cool for 5 mins
6. Enjoy!
