
I had a patient request a recipe for banana nut muffins, so here’s my take! I chose banana bread bites rather than muffins to get the dessert-feel without all the added sugar
Servings: 18 (1 serving = 1 muffin)
Calories per serving: 107
Protein per serving: 3g
Carbs per serving: 15g
Ingredients:
3 cups old fashioned oats
½ cup walnuts (chopped)
1 tablespoon pumpkin pie spice
1 ½ teaspoons baking soda
2 eggs
1 cup almond milk (vanilla)
3 ripe bananas (mashed)
½ cup sugar-free syrup
2 tablespoon olive oil
1 teaspoon vanilla extract
Directions:
1. Pulse oats in a food processor or a blender until the consistency is fine, like flour. Then combine in a bowl with walnuts, pumpkin pie spice, and baking soda in a bowl and set side.
2. In another bowl, combine eggs, almond milk, bananas, syrup, olive oil, and vanilla and whisk.
3. Slowly add dry ingredients to wet ingredients and mix well. Spray a muffin tin with olive oil spray or use cupcake papers to line pan. Fill each muffin tin ¾ way with mixture.
4. Preheat oven to 375. Place muffin pan in the oven and bake for 15 mins. Let cool for 5 mins and enjoy!
