



I haven’t posted in a little while because I’ve been out of town for an obesity management conference! So to come back this week, I thought a classic favorite was the way to go This recipe is packed with protein to keep you full, and has some complex carbs to give you quick energy
Servings: 6
Calories per serving: 357
Protein per serving: 35g
Carbs per serving: 26g
Fat per serving: 12g (6g sat fat)
Ingredients:
1.5 lbs boneless skinless chicken breast
8 oz fresh mozzarella cheese
1 egg (scrambled)
½ cup panko
¼ cup Parmesan cheese
1 teaspoon oregano
1 teaspoon garlic powder
½ cup marinara sauce
3 cups cooked whole wheat pasta
Directions:
1. Cut 3 slits in each chicken breast (don’t cut all the way through, but cut close to the bottom). Mix panko, Parmesan, oregano, and garlic powder in bowl. Then dip chicken in egg, then coat in panko mixture. Place chicken in large baking dish.
2. Cut ½ call of mozzarella into chunks, and cut the other half into slices. Stuff the slits in chicken breast with chunks of mozzarella, then place slices on top. Bake in oven at 425 for 20 mins.
3. While chicken is baking, prepare pasta according to directions. Remove chicken from oven, pour over marinara sauce, and place back in oven for 5 mins.
4. Place ½ cup pasta in bowl, top with chicken, and enjoy!
